Salad:

1 seedless cucumber, finely diced

¼  large red onion, finely diced

3 to 4 roma tomatoes, de-seeded and finely diced

½ medium green pepper, diced

1 T flat-leafed parsley chopped

Handful of feta crumbles

A few kalamata olives

Dressing:

¼ c Extra Virgin Olive Oil

1/8 c Red Wine Vinegar

Salt and pepper to taste

  1. Mix all salad ingredients in a bowl.
  2. Whisk all dressing ingredients together in a small bowl and pour over the top of the salad and stir well.
  3. Garnish with olives.
